"Give them full freedom, then see what happens" is warmer and more colloquial. The "them" creates a social context — there are people involved, not just an abstraction. "Then see" implies anticipation, maybe even a hint of suspense or risk. It invites the reader in.

The first feels like a principle. The second feels like a dare.)
